it is especially during the ganesh festival that modaks, a maharashtrian delicacy, are consumed on a high scale. sweet coconut filling in soft rice flour is served hot with ghee for meals. however, behind these delectable dumplings, there is a lot of hard work. making them soft enough for consumption, yet hard enough to hold the filling inside is a tremendous challenge and that is why even the most skilled chefs find it challenging.

however, accepting this challenge, some of the city's women have started preparing modaks for the festivities. they have bagged many orders and are now ready to deliver their promise of taste for money.

SHARMISHTHA GUPTE-SHINDE, an entrepreneur from kothrud who started her outlet, KHAWAKEE five years ago says, "ukdiche modak is one of the toughest and most time-consuming dishes. however, given the richness of its taste, the demand for it is phenomenal. we at khawakee serve haatwalniche (hand-made) modak, which are immensely popular among people. the 'paari' (layers) of this modak is very thin and it melts in mouth. also, our modak looks very nice."

she further adds, "we have around 25 orders per day where we serve around a 1,000 modaks. our day during ganesh festival begins at 5:30 am in the morning and we are finished with day's orders by 12:30 pm." khawakee's modaks are booked a week prior to the day of order due to its popularity.
